Attiéké with braised fish pairs the fermented cassava couscous emblematic of Côte d'Ivoire with fish marinated and grilled over charcoal, forming one of the most distinctive and beloved meals in the country. Sold on every street corner in Abidjan, this duo alone embodies Ivorian cuisine.

Attiéké, an ancestral preparation of the Ébrié people made from fermented cassava that is granulated and steamed, brings a light, slightly tangy texture that perfectly contrasts with the smoky, spiced fish.

History and origin

Attiéké is an ancestral preparation of the Ébrié people, settled on the Abidjan lagoon, whose know-how of fermenting and granulating cassava has been passed down for generations, traditionally by the women of the community. Having become a national dish and a true symbol of identity for Côte d'Ivoire, it now accompanies braised fish as well as chicken or shrimp, never losing its original authenticity.

The 5 recipe variations

Vegetarian: Replace the fish with grilled vegetables (eggplant, peppers, zucchini) marinated in the same spices.

Vegan: Identical to the vegetarian version.

Gluten-free: Naturally gluten-free.

Budget-friendly: Replace the whole fish with economical fish fillets, marinated and pan-seared rather than grilled.

Gourmet: Use large, handsome fish (captain or thiof) and add grilled shrimp as an accompaniment.

Serving, storage and pairings

Plating: Serve hot, with the attiéké and fish on the same plate, alongside fresh salad and spicy sauce on the side. Add Alloco (fried plantain) as an accompaniment if desired.

Storage: 2 days in the refrigerator, attiéké and fish stored separately in airtight containers.

Freezing: Attiéké freezes well; grilled fish loses texture when thawed, so it's best prepared fresh.

Reheating: Attiéké by steaming or in the microwave; fish in a pan or oven for a few minutes to revive the crispness.

Food and drink pairings: Fresh bissap or a nice cold local beer.
