Garba is the undisputed king of Ivorian street food, a simple yet irresistible combo of attiéké and fried tuna sold at "garbadromes" on every corner of Abidjan, especially popular with students and workers for its excellent value.
Its name is said to come from a contraction of the word "garba," popularised in the 1980s by street vendors who paired local attiéké with imported tuna, then affordable and easy to prepare in large quantities to feed a hungry crowd quickly.
Served with a fresh tomato-onion-chilli sauce made to order, Garba embodies the very essence of African street food: quick, flavourful, economical and deeply rooted in Ivorian urban culture.
History and origin
Garba was born on the streets of Abidjan, where its popular name is said to come from a local contraction linked to Nigerian merchants who initially sold attiéké with tuna to Ivorian students and workers. Over the decades it has become a true institution of Ivorian street food, today inseparable from student and urban life in Abidjan, sold at dedicated "garbadromes."
